Health Benefits

According to the CSIRO, lamb is a good source of the healthy fat conjugated linoleic acid (CLA). In trials, CLA has been shown to possess potentiallly anti-carcinogenic and anti-diabetic properties, in addition to reducing obesity and atherosclerosis (high blood pressure).

  • 1.5kg leg of lamb, boned
  • 40g butter
  • 2 tablespoons honey
  • 2 cups fresh breadcrumbs
  • 1 egg, lightly beaten

  • 1 1/2 teaspoons dried rosemary

Lamb Shanks (serves 6)

 
  • 6 lamb shanks
  • 1 onion, chopped finely
  • 2 carrots, chopped finely
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 bay leaf
  • 500ml (2 cups) wine
  • 750ml (3 cups) beef stock
  • 60g butter
  • 2 tablespoons plain flour
  • 250ml (1 cup) hot milk

Balsamic-glazed lamb cutlets
with broad beans (Serves 4)
  • 12 lamb cutlets, excess fat trimmed
  • 2 tbs balsamic vinegar
  • 2 tsp olive oil
  • 1 red onion, sliced into rings
  • 300g fresh broad beans, shelled
  • 1/3 cup firmly packed fresh 
    continental parsley leaves
  • Salt & freshly ground black pepper
